Peanut Butter Chocolate Chip Banana Bread
1 1/2 cups flours
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp salt
3/4 cup sugar
1 cup mashed bananas (3 or 4 bananas)
1 egg slightly beaten
1/2 cup lard
1/4 cup creamy peanut butter
1/2 cup milk chocolate chips
1/4 cup oatmeal + 2 Tablespoons
Preheat oven 400 degrees.
In a large bowl slightly beat egg. Add sugar, banana, peanut butter, and lard, mix well. In a separate bowl mix flour, baking powder, baking soda, 1/4 cup oatmeal and salt. Add egg mixture, mix until all flour is moist and mixed in. Stir in chocolate chips, pour into greased loaf pan like this one. Sprinkle remaining 2 Tablespoons oatmeal over bread.
Bake for 30 minutes or until toothpick inserted in middle comes out clean and top of loaf is golden brown.
This is absolutely the best banana bread I've tasted yet! My husband and children love it. I tried adding crushed peanuts once, but my family likes it better without.
